For 6 persons :

  • 1 small fennel
  • 3 small white leeks
  • 2 new onions
  • 2 pears
  • 1 lemon
  • 10 cl lightened liquid cream
  • 4 pinches of ground ginger
  • Salt and pepper from the mill
  • olive oil


Remove the ends of the fennel, then cut it in half. Remove the hard part of the base, then slice the rest. Split the leeks in half, wash them well then slice them. Slice the onions, as well as some of their green stems.
Heat a little olive oil in a pan. Add the fennel, leeks and onions and fry over medium heat for 3 minutes. Add water just to cover the vegetables and bring to a boil. Cover, lower the heat and simmer for 10 minutes.
Meanwhile, peel the pears, cut them in half, remove the heart and the central filament and then lemon them. Mix the contents of the sauté pan with the liquid cream and one of the pears. Salt, pepper and add the ginger. Taste and adjust the seasoning.
Let cool and cool.
When serving, cut the second diced pear and lemon them. Serve the soup with the pear dice.
